I’ve used a variety of add-ins: chickpeas, kale, quorn nuggets. Add green beans and cook for 5 minutes, then drain and place in an ice water bath to stop cooking. I pretty much followed the recipe. Hope that helps! As a result it ended up less like rice but was still delicious in the recipe. And sometimes it can create, shall we say, challenges.

I could see this being a hit at a potluck or Thanksgiving.I had to knock this down to 4 stars b/c it involved a lot of steps and different pans and skillets. I brought this to Christmas Day dinner and it was such a hit, as in people were going back for seconds and thirds. My great aunt used to make a family recipe broccoli casserole that became a tradition at all our holiday meals. In a pinch, cayenne pepper works, too! Did others use water or milk? I would just pop it back in the oven to warm through and crisp up the toppings. I would describe it as traditional, comfort food (but it’s healthy!). This took me about 30 min to prep, and created lots of dirty dishes, but it was the first time I tried it, I hope to streamline it a bit more next time. Even as a mushy leftover: delicious! No pans or bowls or used up space on the stove. I’m thrilled that you enjoyed this so much!!! Green beans are a crowd favorite, but you can get that creamy casserole effect using almond milk and cauliflower. That stuff is too dangerous for me to keep around on the regular. It’s my new go to recipe for non vegans. I used 2 cups of cooked brown rice instead of cauliflower. My son won’t eat broccoli unless it’s completely hidden.

I did use organic flour in place of arrow root (no one in the house has gluten issues). There is no way this calls for 2 bags of 32 oz broccoli.

Yes, I definitely would have drained the water, there shouldn’t be any in the pan when mixing in the creamy mushroom mixture. At first look it seems a bit complicated and a lot of dishes to dirty but it is totally worth it. I made a double batch and am taking it to three different Thanksgiving dinners.

I ended up burning the garlic. Added the optional kale and quinoa for a master piece. For a thicker sauce, leave it as is. Side dish glory, but ate as entrée. So I’d just leave them out rather than substituting for anything. I figured you made your own, I will definitely do that the next time I make this (which I’m sure will be soon!).Hi! And…I saved you a dish because I figured out that you can cook the broccoli directly in the casserole dish while the oven is preheating and you’re prepping the sauce.
